Cold Pasta with Green Beans and Broccoli
Wash and trim the vegetables. Boil the vegetables in two different saucepans in abundant salted boiling water. When they are almost cooked, strain them and place them in a bowl, cut the beans into small pieces and drizzle with a little Aprutino Pescarese Extra Virgin Olive Oil, add a pinch of salt and freshly ground pepper to taste.
Cook the pasta in abundant salted water and strain it still al dente then run cold water over it to halt the cooking.
Add the pasta to the vegetables in the bowl adding a generous amount of Aprutino Pescarese and mix in to amalgamate the flavours, then serve.
